Millet is a collective term for small-grained hulled cereals with 10-12 genera. They belong to the sweet grass family (Poaceae). The name millet derives from Old Germanic and ultimately from an Indo-European word meaning satiety, nourishment and nutritional value. Millet is the oldest known grain. It was already used more than 8,000 years ago to make unleavened flatbread. In China, proso millet has been cultivated for at least 4,000 years. Common millet (Panicum miliaceum) was formerly grown as a food crop in Europe as well.
Today, in our part of the world, most people know it only as bird feed, even though millet has much more to offer. In some regions of Africa, millet is still one of the staple foods.
