Green tea is a particular way of preparing tea. Unlike black tea, the tea leaves are not oxidised (formerly referred to as fermented). Because of the different processing, the leaves of Camellia sinensis are generally preferred to the assamica variety for green tea, as the smaller-leaved, more delicate variety is better suited. Green tea differs from black tea, among other things, in its preparation, flavour, constituents and the effects of the infusion.
